One of the unexpected results of the global growth in the popularity of the white Assyrtiko grape, has been a growing number of maverick producers in wine regions around the world that have planted this cultivar either as a playful homage to the original expressions of Santorini and mainland Greece, or as an experimental cultivar to study its capacity in mitigating against the effects of global warming and diminishing water supplies available to agriculture.
